Ingredients for 4 servings:
- 500 g bush beans or runner beans
- 1 small onion(s)
- 1 tbsp butter
- salt and pepper
- 125 ml vegetable stock
- 200 ml crème fraîche or sour cream
- 200 ml sweet cream
- 1 tbsp mustard
- ½ bunch thyme
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Clean the runner beans or green beans, removing any strings and washing them if necessary. Halve the runner beans and cut the green beans into pieces. Finely chop the onions and sauté in hot butter until translucent. Add the beans and sauté briefly. Season with salt and pepper. Add the vegetable stock. Cover the beans and simmer over low heat for 15-20 minutes until soft. Meanwhile, boil the sweet cream and crème fraîche or sour cream in a small pan for about 5 minutes until reduced by about half. Season with 1 tablespoon of mustard, salt and pepper. Add the leaves from ½ bunch of thyme. Drain the beans. Arrange on a platter and pour the sauce over them. Delicious as a side dish with roasted or grilled lamb chops or grilled sausages. Tip: Also delicious cold as a salad.
