Sour cherry jam with port wine

Ingredients for 4 servings:

  • 850 g sour cherries
  • 2 tbsp lemon juice
  • 125 ml port or red wine
  • 500 g gelling sugar (2:1)

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 45 minutes

Combine the prepared and pitted sour cherries, lemon juice, and port wine with the gelling sugar in a saucepan and let stand for about 1 hour. Then, while stirring, bring to a boil and simmer for 4 minutes. If you like, you can blend the jam with a hand blender. Test for setting and let it simmer a little longer if necessary. Pour into prepared jars, seal, and let stand upside down for 5 minutes.
