Berry jam with orange juice

Ingredients for 1 servings:

  • 300 g strawberries
  • 300 g raspberries
  • 300 g currants
  • 300 g blueberries
  • 3 oranges
  • ½ lemon(s), optional
  • 500 g gelling sugar 2:1

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 5 minutes

Rinse the jam jars with hot water, including the lids, and leave to dry in the microwave for about 3 minutes. In the meantime, wash and sort the berries. Place them in a large saucepan and bring to a boil while stirring. Simmer the berry mixture without sugar for about 10 minutes, until the berries have released their juice and have softened. Then pass the mixture through a fine sieve. Now weigh the pureed berry mixture, squeeze the oranges and weigh out to about 750g of juice. Add to the berry mixture, add the 2:1 gelling sugar, mix well, and bring to a boil on the stovetop. Bring the jam to a rolling boil according to the package instructions. Do a set test. To do this, put 1 teaspoon of jam on a small porcelain plate. If it doesn’t set, add the juice of half a lemon and boil for another 1-2 minutes. Pour the hot mixture into the prepared jars. Allow to cool and store, or enjoy straight away.
