Eggplant à la Pizza

Ingredients for 2 servings:

  • 1 eggplant(s) (approx. 300-350 g)
  • 1 tomato(s)
  • 80 g cooked ham
  • 80 g cheese, grated
  • 80 g herb cream cheese
  • some salt and pepper
  • e.g. oregano
  • e.g. paprika powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cut the eggplant into approximately 1 cm thick slices, spread with the herb cream cheese, and top with the ham. Slice the tomato and place it on the ham. Season with salt, pepper, oregano, and paprika, and crumble the cheese on top. Bake in a preheated oven at 160-170°C (fan oven) for about 10-15 minutes, until the cheese is browned and the eggplant is cooked. You can also make this recipe with zucchini; halve the zucchini, top it with the toppings, and bake as described above. The toppings are, of course, variable, just like with a pizza.
