Baked zucchini with minced meat and feta cheese

Ingredients for 1 servings:

  • 1 zucchini
  • 100 g minced meat
  • 50 g sheep’s cheese
  • 30 g Gouda, grated
  • salt and pepper
  • n. B. onion(s)
  • n. B. garlic

Instructions

Working time approx. 12 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 27 minutes

Low-carb

First, brown the minced meat. Optionally, you can sauté the onions and garlic beforehand and fry them with the meat. Season the minced meat. Season to your liking; I personally added a little chili to the pepper and salt. Then, remove the meat from the pan and place it in a small bowl. Add the finely diced feta cheese to the bowl and stir until it all takes on a light sauce consistency. Meanwhile, clean the zucchini and cut it into two equal halves, then fry the cut sides in a high heat in the pan. Once they are a bit browned, turn them over and fry for a moment on the other side. Next, spread the minced meat and feta cheese sauce over the fried cut sides of the zucchini. If you like it really hearty, you can add a slice of fried bacon (4 minutes in the microwave, recipe can be found at Chefkoch) to the minced meat sauce. Finally, the Gouda is placed on the zucchini halves and everything is placed in the oven at 200 degrees for 2 – 3 minutes.
