Potato pancakes with psyllium husks

Ingredients for 2 servings:

  • 500 g potatoes
  • ½ tsp salt
  • ½ tbsp wholemeal spelt flour
  • 2 tbsp psyllium husks
  • some rapeseed oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Quick, easy and vegan

Peel the raw potatoes and then grate them finely. Add the psyllium husks, salt, and spelt flour and knead everything thoroughly. Heat the rapeseed oil in a pan. Add the potato mixture spoonful by spoonful and fry until golden brown on both sides. Sprinkle the potato pancakes with a little sugar and serve with applesauce. Psyllium husks promote healthy digestion because they are rich in fiber.
