Mango and curd casserole with millet and oat bran

Ingredients for 3 servings:

  • 100 g water
  • 40 g wholemeal spelt semolina
  • 40 g millet, crushed
  • 1 tbsp honey
  • 100 ml apple juice
  • 1 small mango(s)
  • 1 tbsp oil
  • 300 g low-fat curd cheese
  • 1 dashes lemon juice
  • 1 tbsp almond butter
  • 2 tbsp oat bran

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Peel and dice the mango. Whisk the almond butter with water until fluffy. Gradually stir in the remaining ingredients and pour into small ovenproof dishes. If you prefer, you can also use a large casserole dish. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Then place the dishes on a rack and bake. Depending on the size, small dishes will take about 20-25 minutes to bake; a large dish will certainly take almost an hour. In this case, check after 40 minutes. Do a toothpick test to see if the casserole is done.
