Pink grapefruit and ginger jam

Ingredients for 1 servings:

  • 9 large grapefruit(s), pink
  • 2 pieces ginger root, pickled in syrup
  • 2.4 kg gelling sugar, 1:1
  • 2 tbsp white rum

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 34 minutes

Peel the grapefruits and carefully remove all skins and seeds. Roughly chop the ginger. Puree everything in a large pot with a hand blender. Stir in the gelling sugar, bring to a boil, and simmer for 4 minutes. Once the gelling test is successful, add the rum and fill into screw-top jars. 9 large grapefruits yield approximately 2.4 kg of pulp, so use the appropriate amount of sugar. Makes approximately 16 medium jars.
