Asian style salad dressing

Ingredients for 1 servings:

  • 1 can coconut milk, approx. 400 g
  • 150 ml Sriracha sauce
  • 100 ml soy sauce
  • 40 ml peanut oil
  • 60 ml rapeseed oil
  • 1 lime(s), juice
  • 1 bunch of coriander leaves
  • e.g. tomato paste
  • e.g. peanut butter

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Combine all liquid ingredients in a bowl. Shake or stir well. Chop the cilantro and stir in. Add tomato paste and peanut butter as desired (for a fruitier or nuttier flavor and creamier consistency) and stir to dissolve. Pour into a bottle and add to salads as desired. The dressing pairs well with raw vegetables and leafy salads.
