Ingredients for 2 servings:

  • 2 tbsp vinegar (apple cider vinegar)
  • 1 tbsp oil (pumpkin seed oil)
  • 1 pinch of salt
  • 1 pinch of pepper, freshly ground

Instructions

Combine apple cider vinegar and pumpkin seed oil in a glass jar. Season with salt and pepper to taste. Mix thoroughly with a fork and sprinkle over the leaves, which are best dried in a salad spinner. The nutty flavor of the pumpkin seed oil pairs well with leaf salad, white bean salad (let it soak in the dressing), or even spinach salad.
