Advent apple jelly

Ingredients for 1 servings:

  • 750 ml apple juice, high-quality
  • 500 g gelling sugar (2:1)
  • 1 stalk(s) cinnamon
  • 1 orange(s), untreated
  • 5 allspice seeds
  • 5 cardamom pods
  • 5 cloves
  • 1 pinch of mace
  • 1 almond(s) (bitter almond)
  • 2 lemons
  • 100 ml white wine

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Squeeze the lemons, cut 4 pieces of peel from the washed orange (approx. 1-2 cm wide, 5-6 cm long, just the orange upper peel). Bring the apple juice to a boil with the white wine, all the spices, lemon juice, and orange segments. Turn off the heat and let the mixture steep for about 30 minutes. Then remove all the spices from the juice using a fine sieve or pour the entire juice through a fine sieve and then mix with the gelling sugar. Bring the juice to a boil while stirring and let it simmer for 4 minutes. Pour the jelly into twist-off jars that have been rinsed with hot water (so they don’t shatter due to the temperature difference), seal, and let cool. This quantity makes about 6 small jars.
