Ingredients for 1 servings:
- 200 g raisins or cranberries
- 200 ml apple juice
- 3 drops of rum flavoring
- 850 g apples, peeled and grated
- 1 lemon(s), the juice
- 200 g marzipan paste
- 500 g gelling sugar 2:1
- 3 drops of bitter almond flavor
- 100 g almond flakes
- 2 tsp cinnamon powder or gingerbread spice, approx.
Instructions
Working time approx. 45 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 12 minutes; Total time approx. 8 hours 57 minutes
Soak the raisins in the apple juice with the rum flavoring. Let it steep for a few hours. Mix the peeled and grated apples with the lemon juice and the gelling sugar (it goes faster if you soften the quartered apples in the microwave for about 6-7 minutes at 600W and then mash them with a potato masher). Cut the marzipan into small pieces. Mix all the ingredients (the almonds can also be caramelized or simply roasted) in a saucepan, bring to a boil, and simmer for at least 5 minutes. Be careful—it will splash! If you don’t like chunks in your jam, you can then puree the mixture with a hand blender. Pour into screw-top jars and let cool. The jam is delicious and also goes great with rice pudding, pancakes, as a filling for apple turnovers, and certainly also as a muffin filling.
