Sweet whole-grain yeast pancakes

Ingredients for 4 servings:

  • 200 g wholemeal spelt flour or wholemeal wheat flour
  • 4 tsp, stratified dry yeast
  • 400 ml soy milk (soy drink) or other plant milk
  • 8 tbsp sugar
  • 4 pinches of cinnamon
  • Vanilla flavor
  • Oil for frying
  • n. B. Fruit, fruit puree or jam for the topping

Instructions

Working time approx. 20 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Thoroughly mix the flour, yeast, sugar, cinnamon, and vanilla extract. Add the soy milk and mix thoroughly with a hand mixer. Let it rise in a warm place for 15 minutes, covering the bowl with a damp cloth. Caution: The batter should not be too thick; it is best if it is semi-liquid. Fry the pancakes in a pan with a little hot oil until crispy brown on both sides. You can also top these pancakes with various fruits, such as apples or plums, while they are baking. Or spread them with jam, plum sauce, or apple sauce after baking.
