Ingredients for 3 servings:

  • 1 cup flour (e.g. mixed spelt and whole wheat)
  • 1 tsp brown sugar
  • 1 tsp baking powder
  • 1 pinch of salt
  • 1 tsp cinnamon powder
  • 1 cup of oat milk (oat drink) or soy or rice milk
  • 1 banana(s), very ripe
  • 1 tsp vanilla sugar
  • ½ banana(s) or apple
  • Vegetable oil for baking

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Mash the banana and whisk with oat milk and vanilla sugar. Mix the other dry ingredients and fold into the banana milk. Finally, stir in half a sliced ​​banana or half a grated apple (or both). Heat oil in a pan and fry the pancakes in batches on both sides (makes 8-9 pancakes). Tastes delicious with maple syrup and walnuts, or simply on their own.
