Ingredients for 4 servings:
- 500 g broccoli
- 500 ml vegetable stock or salt water
- 200 g sheep’s cheese (feta)
- 1 bell pepper(s), red or orange
- 1 large onion(s)
- 1 garlic clove(s)
- 1 tbsp pumpkin seed oil
- 1 tbsp Balsamic vinegar, red, or balsamic reduction
- 1 bunch of herbs, fresh or frozen
- 1 tbsp syrup (raspberry syrup)
- e.g. salt and pepper
- 1 tbsp sunflower seeds
- 75 g lean ham, diced
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Wash and trim the broccoli, and blanch it in vegetable stock or salted water. Reuse the stock or salted water for a soup. (Thaw frozen broccoli; no need to blanch it.) Cut the broccoli into small, bite-sized florets. Dice the feta cheese. Wash, deseed, and dice the bell peppers. In a bowl, stir together the vinegar, raspberry syrup, oil, the finely chopped herbs, the peeled and chopped onion, and the peeled and crushed garlic to make a sauce. (If you like it very saucey, you can add a splash of water.) Then add the broccoli, diced ham, bell peppers, and feta cubes and gently fold in. Season with salt and pepper to taste. Finally, sprinkle the sunflower seeds over the top.
