Raw carrots with ginger and coconut

Ingredients for 1 servings:

  • 150 g carrot(s)
  • 20 g coconut or 1 tbsp desiccated coconut
  • 5 g fresh ginger
  • 2 tbsp sour cream
  • ½ lemon(s), juice
  • 1 pinch of curry powder
  • ½ tsp coriander, crushed
  • 50 g pineapple, fresh
  • Sea salt
  • pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Finely grate the carrots. Dice the pineapple. Chop the coconut and ginger. Add to the sour cream along with the lemon juice and spices, stir, and season to taste. Fold the seasoned sour cream into the grated carrots and top with the pineapple cubes. Approximately 186 kcal per serving.
