Ingredients for 2 servings:

  • 2 large carrots
  • 1 m.-sized onion(s)
  • 1 tsp, heaped parsley, freshly chopped
  • 1 garlic clove(s)
  • 250 ml vegetable stock

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Quick, easy and delicious!

First, fry the finely chopped onions, freshly chopped parsley, and minced garlic clove in a little oil in a large pan over medium heat for about 2 minutes. Then add the halved carrot slices and cook for another 3 minutes. Then, pour 250 ml of hot vegetable broth (or other broth, depending on your taste) over the remaining ingredients and let everything simmer for about 15 minutes, until the broth is almost completely absorbed. Even my kids really like it.
