Ingredients for 2 servings:

  • 250 g pasta (wholemeal pasta Integrali)
  • 150g Miracel Whip Balance 15% fat
  • ½ tbsp mustard
  • ½ tbsp ketchup (spiced ketchup)
  • 140 g vegetables (Mexico mix)
  • 95 g gherkin(s) (cornichons)
  • 20 g chives, frozen
  • salt and pepper
  • possibly tomato(s), dried
  • possibly cashew nuts

Light vegetarian ingredients, quickly prepared

This pasta salad is quick to make: Cook the pasta according to the instructions. In the meantime, slice the gherkins into small pieces and place them in a large bowl along with the Mexican mix. Combine the Miracle Whip, mustard, ketchup, and chives, and season with salt and pepper. Add the cooked pasta to the bowl and toss everything with the sauce. Then let it sit in the refrigerator for about 15 minutes. If you have time and are in the mood for chopping, you can add sun-dried tomatoes. The salad also tastes good with cashews.
