Speculoos Tiramisu with Raspberries – Low Calorie Edition

Ingredients for 4 servings:

  • 125 g RAMA Cremefine for whipping
  • 250 g Skyr
  • n. B. flavor powder (e.g. shortbread)
  • 60 g speculatius biscuits
  • 125 g raspberries, frozen

Instructions

Working time approx. 10 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 10 minutes

A higher protein and lower calorie version of my favorite Christmas dessert.

Thaw the raspberries slightly. Whip Rama Cremefine. Fold in the skyr and flavor powder or sweetener as desired. Crumble the speculoos biscuits (for example, place them in a plastic bag and roll them over with a rolling pin). Now it’s time to layer: First, pour some skyr cream into small dessert glasses, distribute the speculoos biscuits over them, and then top with the raspberries. Repeat the process and finally cover with the remaining skyr cream. Refrigerate for a few hours (preferably overnight). Just before serving, garnish with speculoos biscuits and raspberries, if desired. Nutritional information per serving: 188 calories | 16 g carbohydrates | 9 g protein | 9 g fat
