Potato and leek casserole

Ingredients for 4 servings:

  • 500 g potatoes
  • 400 g leek
  • 200 g ham
  • 30 g butter
  • salt and pepper
  • 125 ml cream (whipping cream)
  • 2 eggs
  • 250 g cheese, grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Peel the potatoes and boil in plenty of salted water until al dente. Then let them cool and cut into slices about 1 cm thick. Wash and trim the leek and cut it into strips. Heat a little oil in a pan and sauté the leek. Cut the ham into thin strips. Grease an ovenproof dish and layer the potato slices, ham, about 150 g of cheese and leek. Season with salt and pepper. In a small bowl, whisk the cream with the eggs and spread this mixture over the casserole. Sprinkle the remaining 100 g of grated cheese on top and bake in the oven at 180 °C (top/bottom heat) for about 30 minutes until the cheese is golden brown.
