Schupfnudel – Frittata

Ingredients for 2 servings:

  • 150 g broccoli
  • 2 eggs
  • 100 g whipped cream
  • 50 ml milk
  • 1 onion(s)
  • 250 g Schupfnudeln, ready-made product; refrigerated shelf
  • 40 g ham, diced
  • 1 tbsp oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

with broccoli and ham cubes

Preheat oven to 175 degrees Celsius (350 degrees Fahrenheit). Whisk eggs, mix with cream and milk, and season with salt and pepper. Wash and finely chop the broccoli, and finely chop the onion. Heat oil in an ovenproof pan. Sauté the onion and diced ham, add the broccoli and potato dumplings, and fry briefly. Add the egg mixture and mix well. Place the pan in the oven and bake the frittata at 175 degrees Celsius (350 degrees Fahrenheit) for about 25 minutes. Season again if desired.
