Ingredients for 4 servings:
- 1 lime(s), untreated, zest grated, juiced
- 1 tsp sambal oelek
- 3 tbsp soy sauce, light
- 2 tbsp honey
- 1 tsp sesame oil, dark
- Salt
- 1 mango(s), ripe
- 300 ml vegetable stock, alternatively vegetable broth
- 4 tuna fillets, approx. 150g each
- 1 tbsp peanuts, roasted, salted, coarsely chopped
- 2 spring onions, cut diagonally into very fine rings
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 30 minutes
Combine the lime zest and 2 tablespoons of juice with the sambal oelek, soy sauce, honey, sesame oil, and a pinch of salt. Heat the broth in a pan, rinse the tuna, pat dry, season with salt, and add it to the broth. Cover and let the fillets simmer over low heat for about 3-5 minutes. Drain the tuna, arrange on plates, and drizzle with half of the salsa. Arrange the thinly sliced mango flesh on top and drizzle with the remaining salsa. Serve with the spring onions and nuts.
