Ingredients for 4 servings:
- 250 g Kritharaki (rice-shaped noodles)
- 500 ml vegetable stock
- 150 g cream cheese alternative, vegan
- 1 small zucchini
- 1 bell pepper(s)
- 200 g tomatoes
- 100 g mushrooms
- 1 small onion(s)
- 1 clove(s) garlic
- e.g. salt and pepper

Chop the vegetables into small pieces. Then place all the vegetables in a baking dish with the kritharaki, spices, and vegetable stock. Stir well to ensure nothing sticks to the bottom of the dish and the liquid is evenly distributed. Finally, add the vegan cream cheese alternative on top and bake in the oven at 180 degrees Celsius/fan for about 45 minutes. Then stir in the vegan cream cheese alternative and enjoy.
