Waldburger Mixed Farmer’s Salad with Egg, Feta and Walnuts

The perfect waldburger mixed farmer’s salad with egg, feta and walnuts recipe with a picture and simple step-by-step instructions.

For the dressing:

  • 1 medium sized Cucumber, green, slim, seedless
  • 2 medium-sized Potatoes, waxy
  • 2 medium-sized Tomatoes, red, fully ripe
  • 80 g Sugar snap peas, green, fresh
  • 1 medium sized Clove of garlic, fresh
  • 6 tbsp Orange juice
  • 1 tbsp Oregano, fresh or frozen
  • 40 g Feta
  • 2 tsp Aceto Balsamico Tradizionale, (alternatively Aceto Balsamico di Modena)
  • 1 tbsp White wine vinegar, mild
  • 1 tsp Sugar, white, fine
  • 2 tsp Chicken broth, Kraft bouillon
  • 1 tsp Black pepper, fresh from the mill
  • 3 tbsp Extra virgin olive oil

To garnish:

  • 1 Egg, size M
  • 4 Walnut halves
  • 60 g Feta
  1. Boil the potatoes the day before and store them unpeeled in the refrigerator overnight. Wash the lettuce leaves, spin dry and place on a large serving plate. Cut off the cucumber at both ends, peel it like a zebra and slice / cut across into approx. Place over the lettuce leaves.
  2. Peel the potatoes, cut in half lengthways and cut across into thin slices. Place in a circle on the plate at a distance of approx. 2 cm from the edge (place the remaining slices inside the tomato ring).
  3. Remove the stems from the tomatoes, peel them, quarter them lengthways, remove the green stem and the grains. Halve the quarters lengthways and place on the inside of the potato ring. Blanch the snow peas in boiling salted water for 3 minutes and rinse in ice-cold water. Place on the outer edge. Crumble the feta over the salad.
  4. For the dressing, cap the clove of garlic at both ends, peel it and squeeze it into a sufficiently large bowl with a garlic press, add the remaining ingredients and mix, but do not homogenize.
  5. Just before serving, drizzle the dressing over the salad. Open the egg and fry it in a ring with the fried egg. Season with a pinch of salt and pepper and place in the center. Add the walnuts between the egg and the tomato ring.
  6. Serve the salad as a starter with toasted white bread and enjoy at room temperature.
