Vegan celery schnitzel

Ingredients for 4 servings:

  • 1 celeriac
  • ½ cup flour
  • 1 cup plant milk (plant drink)
  • breadcrumbs
  • Herbs
  • salt and pepper
  • lemon juice
  • oil

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Cut the celery into slices about 1-2 cm thick. Remove the skin with a knife and boil in salted water for about 10 minutes. The celery slices should be tender but still have a bite. Mix the milk and flour and season with salt, pepper, herbs, and a few squeezes of fresh lemon juice, if desired. Toss the celery slices in the flour-milk mixture and then in the breadcrumbs. Fry in oil for about 5 minutes on each side until golden brown. I use coconut oil. The same works with kohlrabi. However, here I would use 2-3 bulbs for 4 servings.
