Ingredients for 4 servings:

  • 2 egg whites
  • 30 g arugula
  • 4 tbsp olive oil
  • 1 tbsp Balsamic vinegar bianco
  • 1 tbsp Dijon mustard
  • 1 dashes Tabasco
  • salt and pepper

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Beat the egg whites until frothy and blend them with the arugula, olive oil, balsamic vinegar, mustard, and Tabasco. Season with salt and pepper.
