Instructions
Working time approx. 15 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes
Mix the soap powder, soy flour, gyro seasoning, smoked salt, garlic powder, onion powder, and paprika in a bowl. Mix the water, soy sauce, and 1 tablespoon of rapeseed oil in another bowl. Then combine the dry ingredients with the wet ingredients and knead thoroughly for 5-6 minutes. Pull occasionally until it becomes stringy. Then let it rest for 20 minutes. Knead again for 1-2 minutes, then shape into four pieces and add to the pan with 1 tablespoon of rapeseed oil. Fry the steaks until golden brown. Drain any remaining oil. Top up with the broth, add the soy sauce and smoked salt, and simmer the steaks gently for about 10 minutes. Remove the steaks and dry them on kitchen paper. Then briefly sear or grill them. You can also make them ahead and store them in the refrigerator for a few days or freeze them.
