Apple and avocado salad with sorrel vinaigrette

Ingredients for 4 servings:

  • 2 apples (Granny Smith)
  • 2 avocados
  • lemon(s)
  • 4 leaves of sorrel
  • 1 small red chili pepper(s)
  • 2 tbsp sugar
  • 3 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash, quarter, and core the apples, then cut into thin slices or slice. Peel and halve the avocados and remove the pits. Cut the avocado halves into thin wedges. Place the apple slices and avocado wedges in a bowl, drizzle with a little lemon juice, and mix loosely. Rinse the sorrel, shake dry, and slice the leaves into strips. Halve the chili pepper, remove the seeds, and finely chop. Boil the remaining lemon juice with the sugar until reduced, then remove from the heat and stir in the olive oil. Season the vinaigrette with salt and pepper, stir in the sorrel and chili. Pour the vinaigrette over the apple slices and avocado wedges and mix everything together gently. Serve immediately.
