Tomato and pepper salad with vegan feta

Ingredients for 2 servings:

  • 3 m.-large tomato(s)
  • 2 m.-large pointed peppers, red
  • 1 m.-large onion(s), red
  • 1 pack of cheese substitute (vegan shepherd’s cheese or Veta), approx. 200 g
  • 1 pack of salad herbs
  • 3 tbsp oil
  • 3 tbsp water
  • e.g. salt and pepper
  • e.g. parsley, flat

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the tomatoes and bell peppers, deseed the bell peppers, peel the onion, and chop everything into small pieces. In a bowl, combine the oil with the water and the salad herb mix. Add the chopped tomatoes, bell peppers, and onion to the oil mixture and mix everything well. Dice the vegan feta cheese, add it, and mix everything together. Season with salt and pepper. Chop the parsley if desired, add it to the salad, and mix well. Serve with warmed baguette and a good red wine.
