Cauliflower with a twist

Ingredients for 4 servings:

  • 1 large cauliflower
  • 1 bunch of spring onions
  • 2 garlic cloves
  • 2 cm ginger
  • 3 tbsp oil
  • ½ tsp mustard seeds
  • 1 red chili pepper(s)
  • 1 pinch of ground cumin
  • 1 pinch of saffron
  • 1 tbsp curry
  • ½ bunch coriander leaves
  • Salt
  • 1 lemon(s), the juice

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the cauliflower into florets, slice the spring onions into rounds, finely dice the garlic, and finely grate the ginger. Briefly roast the mustard seeds in the oil, then sauté the spring onions and garlic until translucent, then add the finely chopped chili. Now add the cauliflower to the pot and the spices. Cover the pot and sauté the cauliflower for 20 minutes. Finally, drizzle with the lemon juice and coriander.
