Braised onions

Ingredients for 6 servings:

  • 1 ½ kg onion(s), small, brown
  • 6 tbsp oil (olive oil)
  • 1 tsp thyme, dried
  • 3 bay leaves
  • 1 pack of diced tomatoes (500g)
  • ¼ liter white wine
  • Salt and pepper, from the mill

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Pour boiling water over the onions, let them simmer for 5 minutes, drain, and remove the skin. Heat the oil in a casserole dish, add the onions, and toss in the oil. Add the bay leaf, thyme, tomatoes, and wine. The onions should be just covered. Sprinkle with salt and pepper and braise uncovered in a preheated oven at 175°C for 1.5 hours, stirring the onions occasionally. This pairs perfectly with grilled meat. You can braise the onions 1-2 days in advance; they taste even better when well-simmered.
