Ingredients for 2 servings:

  • 1 onion(s)
  • 1 zucchini
  • 4 tomatoes
  • 1 tsp vegetable broth, instant
  • Garlic
  • n. B. Oil
  • possibly water

Instructions

Cut the onion into slightly larger rings and fry in oil. Peel and dice the zucchini. Add to the onions and fry. Dice the tomatoes and add to the pot. Stir frequently. Cover the pot to prevent the liquid from escaping. Stir frequently to allow the vegetable juices to escape (add a little water if necessary). Add vegetable stock and season with fresh garlic. Simmer with the lid on for about 5-10 minutes (depending on how crunchy you want the vegetables). This is a great sauce for spaghetti.
