Ingredients for 1 servings:
- 4 small beetroots approx. 200 g
- 2 oranges, organic
- 1 piece(s) apple
- 1 tsp mustard, hot, or more if desired
- 1 tbsp extra virgin olive oil
- Salt
- Pepper, freshly ground
Instructions

Fruity and spicy, not cooked
Thoroughly clean, peel, and dice the beetroot. Wash the apple, remove the stem and core, and chop it slightly without peeling. Wash and dry the oranges thoroughly. From one orange, zest off some of the zest and set aside. Juice both oranges. Place all ingredients in a blender and blend. Ladle the soup onto a plate and garnish with the orange zest.
