Nut Amaranth Bars

Ingredients for 1 servings:

  • 100 g hazelnuts, coarsely chopped
  • 50 g dark chocolate, e.g. Ritter Sport Voll Nuss Amaranth
  • 20 g puffed amaranth
  • 40 g date syrup
  • 1 pinch(s) vanilla powder
  • 1 pinch(s) sea salt
  • 70 g rice syrup

Instructions

Working time approx. 5 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 5 minutes; Total time approx. 1 hour 10 minutes

Nutty and delicious with chocolate, vegan, sugar-free, makes about 12 bars

Roughly chop the chocolate. Mix the nuts and amaranth with the chocolate in a bowl. Line a small baking dish with plastic wrap. Bring the date syrup, vanilla powder, salt, and rice syrup to a boil in a saucepan and simmer gently for 1-2 minutes. Add the warm syrup to the dry ingredients and quickly mix everything together. Pour the mixture into the baking dish and press it together tightly. This works best if you press the mixture together tightly from above and below with plastic wrap. Refrigerate the baking dish for about 1 hour. Remove the mixture from the plastic wrap and cut into 12 bars using a sharp knife. The bars can be decorated with melted chocolate if desired. Keep refrigerated until ready to serve.
