Basic recipe for low-carb muffins

Ingredients for 1 servings:

  • 80 g almond(s), blanched, ground
  • 50 g desiccated coconut
  • 1 tbsp baking powder
  • 2 eggs
  • 5 tbsp oil (coconut)
  • 5 tbsp coconut milk
  • 3 tbsp natural yogurt, low-fat
  • ½ lemon(s) or orange, the juice
  • 3 tsp honey or agave syrup or maple syrup

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Beat the eggs until frothy. Add the wet ingredients (oil, coconut milk, yogurt, lemon or orange juice, honey) to the eggs and mix. Combine the dry ingredients (almonds, desiccated coconut, baking powder) in another bowl and then add to the wet mixture. Gently mix everything until smooth. Pour the batter into baking molds and bake in a preheated oven at 175°C (top/bottom heat) for 15-20 minutes. You can also add cocoa, vanilla, cinnamon, fruit, or whatever you like, if desired.
