Ingredients for 4 servings:

  • 600 g potatoes, new
  • 1 garlic clove(s)
  • 1 bay leaf
  • 150 g cherry tomatoes
  • 4 spring onions
  • 1 bunch of basil
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper, black from the mill

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Boil the potatoes with the bay leaf and garlic clove in salted water for 15-20 minutes, then let the steam evaporate. Remove the bay leaf and garlic, and peel the potatoes. Wash the tomatoes, spring onions, and basil. Chop the tomatoes, slice the spring onions, and tear the basil. Mash the potatoes, add the vegetables, and stir in the oil and lemon juice. Season with salt and pepper. Serve with a green salad. It also tastes delicious with steamed fish.
