Ingredients for 2 servings:
- 400 g chicken breast fillet(s)
- 1 tomato(s), 150 g
- 100 ml dry white wine
- 10 ml olive oil
- ½ tsp salt
- ½ tsp garlic powder
- ½ tsp sweet paprika powder
- ½ tsp herbs de Provence
Instructions

Whisk together all of the marinade ingredients in a glass bowl to form a marinade. Pierce the chicken breast all over with a steak knife or a sharp knife. Pour boiling water over the tomato, skin and deseed, and cut the tomato flesh into thin strips. Add the tomato to the marinade along with the chicken breast. Cover and let marinate overnight, stirring occasionally. The next day, remove the meat from the marinade. Sear the chicken breast on one side in a non-stick pan, then turn and, covered, continue to sear on the other side for about 10 minutes. Finally, add the marinade to the pan and bring to a boil briefly. Serve immediately.
