Pickled curry coconut turkey breast for the grill

Ingredients for 6 servings:

  • 1 ½ kg turkey breast
  • ½ bottle of white wine, dry or semi-dry
  • 1 tbsp curry powder
  • 1 can coconut milk (400ml)
  • Soy sauce

Instructions

Working time approx. 10 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 10 minutes

marinade

Slice the turkey breast. Mix together the white wine, coconut milk, and curry powder. Add enough soy sauce and stir until the marinade tastes a bit salty; this is exactly how it works. Marinate the turkey breast in the marinade and let it marinate in the refrigerator for at least 12 hours. Remove from the refrigerator 1 hour before grilling. This marinade will make the turkey meat wonderfully tender when grilled.
