Chicken breast in lemon pepper marinade

Ingredients for 1 servings:

  • 200 g chicken breast
  • 1 tsp lemon pepper
  • 1 tsp honey
  • 1 tbsp lemon juice
  • 2 tbsp oil

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 50 minutes

for the oven or on the grill

Mix lemon pepper, honey, lemon juice, and oil to form a smooth marinade. This may take a few minutes. Rub the marinade well into the chicken breast. This is best done in a bowl or in a freezer bag that you seal with a clip. Let the chicken breast marinate in the refrigerator for about 1 hour. Remove the chicken breast from the marinade and place it in a casserole dish or on a wire rack with a baking sheet underneath. Preheat the oven to 180°C (top/bottom heat) and roast the chicken breast on the middle rack for about 35 minutes, depending on the thickness, until the meat is no longer raw. Serve with homemade potato wedges and beans wrapped in bacon or vegetable rice. When grilling the chicken breast, pay attention to the thickness of the meat so it doesn’t dry out. Serve with corn on the cob with butter and salt and grilled potatoes.
