Elderberry jam with apple and orange

Ingredients for 1 servings:

  • 1 kg elderberries, picked and weighed
  • 400 g apples, sweet e.g. Golden Delicious
  • 1 orange(s), organic
  • 700 g gelling sugar, 2:1

Place the picked elderberry in a saucepan with the gelling sugar. Wash the orange and dry it. Grate the zest and add half of it to the elderberry sugar mixture. Reserve the rest in a bowl. Squeeze the orange and add the juice to the pan. Stir everything together and let it steep for about 12 hours (preferably overnight). The next day, peel and trim the apples, cut them into small cubes, and add them to the elderberry. Bring the jam to a boil and simmer gently for about 10 minutes. Then pass it through a food mill and bring back to a boil briefly. Test for settling and season to taste. If you like, add the remaining orange zest. When the jam has set, pour it into prepared twist-off jars while it is still hot, seal immediately, and turn it upside down for about 2 minutes to create a vacuum. This is a very nice, fruity variation of elderberry jam. The orange can also be omitted and replaced with cinnamon. We prefer it with orange, though.
