Rocket salad with avocado

Ingredients for 4 servings:

  • 300 g rocket
  • 300 g grapes, seedless, green and blue
  • 2 small onions
  • 2 small avocados, approx. 200 g each
  • 150 g walnuts
  • 8 tbsp white wine vinegar
  • 3 tbsp honey
  • 1 tsp mustard, medium hot
  • salt and pepper
  • oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the rocket and shake dry. Wash and halve the grapes. Finely slice the onions. Halve the avocados and remove the pits. Scoop out the flesh with a spoon, cut into large cubes, and drizzle with lemon juice. Roast the walnuts without fat and let cool. Whisk together the vinegar, honey, and mustard, gradually whisking in the oil. Season the vinaigrette with salt and pepper. Combine the dressing with the prepared ingredients and arrange in a bowl. Serve with baguette.
