Grandma's pizza soup

Ingredients for 6 servings:

  • 2 large onions
  • 500 g minced meat
  • 1 tbsp olive oil
  • 1 bell pepper(s), red
  • 1 bell pepper(s), yellow
  • 1 can of mushrooms
  • 1 can of corn
  • ¾ liter vegetable broth
  • 1 cup of cream
  • 2 pkt. tomatoes, chopped (Tomato al gusto with herbs)
  • 200 g cream cheese spread
  • salt and pepper
  • oregano
  • possibly Parmesan, grated

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

Dice the onions and sauté them with the minced meat in olive oil. Dice the bell peppers and add them to the minced meat along with the mushrooms and corn. Sauté everything briefly, then deglaze with the vegetable stock. Add the cream, tomato sauce, and cream cheese spread and simmer for about 10 minutes. Finally, season to taste with salt, pepper, and oregano. When serving, sprinkle some grated Parmesan cheese on top of the soup, if desired. Baguette is best served with this soup. Tip: It also tastes good as a pasta sauce; use less vegetable stock.
