Fried pear with cheese sauce

Ingredients for 4 servings:

  • 4 bulb(s), slightly firm
  • 160 g blue cheese
  • 160 g crème fraîche
  • 1 dashes lemon juice
  • 120 g Emmental cheese, grated
  • 150 ml white wine
  • 150 g wheat flour type 405
  • some sugar
  • Salt
  • some flour for dusting
  • Cranberries from the jar

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Peel, quarter, and core the pears. Toss four pear quarters with blue cheese and crème fraîche, and season with a little lemon juice. Mix the flour, wine, and Emmental cheese into a batter and season with salt and sugar. You may need to add a little more wine. Coat the remaining pear quarters in flour, dip them in the cheese batter, and fry in a deep fryer at 180°C until golden brown. Arrange the pears on plates with the blue cheese sauce and serve with cranberries.
