Galettes with Camembert, pear and cranberries

Ingredients for 2 servings:

  • 1 portion of dough for galettes, in my recipes
  • 1 ½ pear(s), approx.
  • 30 g Camembert(s) or Brie, approx.
  • 12 tsp cranberry compote (wild cranberries), approx.

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Prepare the batter according to the basic recipe. Cut the cheese into thin slices and roughly tear the ham slices. Quarter the pears lengthwise, remove the cores, and cut the quarters into thin slices. For each pancake, heat about 1 tablespoon of butter in a large nonstick pan, pour in 1 ladleful of batter, and swirl to spread. Spread about 30-40g of cheese, 1/4 pear each, and 2 heaped teaspoons of cranberry compote over the batter, leaving a 2-3 finger-wide border around the edges. When the batter has set and begins to brown and crisp on the back, fold the edges towards the center on all four sides and briefly press them down with a spatula.
