Vegetable onion, cucumber and tomato salad

Ingredients for 4 servings:

  • 1 large onion(s)
  • 1 large cucumber(s)
  • 250 g cocktail tomatoes
  • ½ lemon(s)
  • 1 bunch of chives
  • ½ bunch parsley
  • 4 cloves garlic
  • 4 tbsp vinegar (elderflower-apple vinegar or another fruity vinegar)
  • 3 tbsp Balsamic vinegar, white
  • 3 tbsp olive oil
  • Pepper, freshly ground
  • herbal salt

Instructions

Peel the onion and slice it very thinly using a mandoline. Peel the cucumber and slice it finely. Wash, dry, and thinly slice the tomatoes. Place everything in a bowl and mix together. Finely chop the chives and parsley and add to the vegetables. Squeeze the lemon juice. Peel the garlic. Mix the lemon juice, vinegar, oil, garlic, pepper, and salt together in a bowl to make a dressing. Pour over the vegetables and mix well. Let it stand for a moment and enjoy. A great side salad for pasta, rice, or other vegetarian or vegan dishes.
