Ingredients for 2 servings:
- 250 g mild sheep’s cheese
- 150 g cherry tomatoes
- 1 spring onion(s)
- ½ bunch parsley, flat
- 1 garlic clove(s)
- 1 small chili pepper(s), fresh, red or dried, crumbled
- 2 tbsp balsamic vinegar
- 5 tbsp olive oil

one of our favorite dishes when things have to go very quickly in the evening
Slice the feta cheese and arrange them in a small, ovenproof dish, tiled like a roof. Top with the tomatoes, halved or pierced with a toothpick (to prevent bursting). Sprinkle with chopped leeks and parsley, crushed garlic, and the dried, crumbled or finely sliced fresh chili pepper. Mix together the vinegar and oil and drizzle over the top. Bake in a preheated oven with the grill function on the second shelf from the bottom for about 5-8 minutes.
