Ingredients for 8 servings:

  • 150 g speculatius (almond or spiced speculatius)
  • 4 egg yolks
  • 100 g sugar
  • 50 g vanilla sugar
  • 100 ml apple juice
  • 400 g cream, fresh

Working time approx. 40 minutes; Rest time approx. 9 hours; Total time approx. 9 hours 40 minutes

simple but impressive Christmas dessert

Place a 1.5-liter loaf pan in the refrigerator. Combine the egg yolks, sugar, vanilla sugar (preferably homemade), and apple juice in a round stainless steel bowl. Whisk the mixture over a hot water bath (do not boil the water, as it may curdle) until the mixture turns white and thickens. Then whisk it in a cold water bath. Crumble the speculat biscuits and gently stir in. Whip the cream until stiff and fold in. Pour the mixture into the prepared pan and freeze overnight. Briefly dip the pan in hot water before serving. Turn the parfait out and slice it. Garnish with grated white chocolate or serve with exotic fruits.
