Ingredients for 1 servings:

  • 400 ml coconut milk
  • 1 onion(s)
  • 2 cloves garlic
  • 1 piece(s) ginger, thumb-thick
  • ½ lemon(s), the juice
  • 6 tbsp peanut butter
  • 1 tsp, heaped curry paste, red
  • Peanut oil
  • Soy sauce (Ketjap manis), sweet
  • 1 tsp, leveled chili flakes

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

With chicken and rice

Finely chop the onion and garlic. Grate the ginger. Sauté them together in a little oil. Stir in the curry paste and simmer briefly. Deglaze with coconut milk, then add the peanut butter. Bring to a boil while stirring. Season to taste with ketjap manis, lemon juice, and chili flakes.
