Ingredients for 4 servings:

  • 2 cheeses (Harzer), diced
  • 125 g butter
  • 250 ml beer
  • 2 tsp caraway seeds
  • Paprika powder, sweet
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Erzgebirge cooked cheese

Melt the butter in a saucepan, add the beer, and stir. Bring to a boil briefly. Then, reduce the heat to low and add the diced cheese, whisking continuously until smooth. Add the caraway seeds and paprika, and season with salt and pepper. Then transfer to small containers and let cool. It will keep well in the refrigerator for about a week. It doesn’t need to rest and can be eaten immediately. Serve on farmhouse bread with a few onion rings and pickles. Tip: It also tastes delicious with a small pinch of garlic.
