Ingredients for 4 servings:
- 1 kg parsnip(s)
- e.g. salt and pepper
- e.g. walnut oil or olive oil
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes
Wash the parsnips, peel them thoroughly, and cut them into thin sticks. Place the sticks in a large, shallow baking dish (a baking sheet would probably work too). Season the vegetables with salt and pepper and drizzle with oil (I use walnut or olive oil). Cook everything in a preheated oven at approximately 180°C (top/bottom heat) on the middle rack. The parsnips are done when they feel tender (like chips). Note: I don’t have exact measurements for salt, pepper, and oil—I always do it by eye. Be careful with olive oil because of its stronger flavor. This is a very simple dish, but absolutely delicious! I serve it as a side dish with fish, roasts, and minced steaks, and it can also be eaten as a main course with herb quark (though only for two people).
